Enchiladas were pretty daunting to me. I didn't know I could make "red sauce" at home or if I could get the tortilla shells to stay in place, or if everything would taste decent once I baked it, but it all worked and was very yummy!Read More

My taste for smoothies comes and goes, especially in the winter. Waking up to eat a frozen breakfast isn't very appetizing when it's a total of 10 degrees outside! Summertime is the time for smoothies in my opinion, but my body doesn't need fruit only in the summer, so I have been trying to dump a bunch in my Ninja blender a few times a week this winterRead More

Matthew and were both more than ready to say adios to the bad eating we embraced over the holidays, so it was nice to pull out that friendly crock-pot and fill it with whole foods.
I was especially excited about this recipe because it was so simple!
I did SO MUCH COOKING from Thanksgiving to New Years that I am *almost* sick of my kitchen!
So to be able to dump these simple ingredients in the crock-pot and have minimal cleanup helped make the transition from holiday foods to whole foods MUCH easier!
Matthew is always bragging about my cooking to other people which is just the sweetest thing.
He likes to say we have "restaurant quality food at home every night" and that's a compliment I will take!
I do find joy in cooking things that are fun to eat and don't leave us feeling bloated or stuffed afterwards.
This casserole is the perfect example of that.
It's quite flavorful without being too heavy.
I hope you'll give it a try!
Esta comida es muy delicioso!
After you make this, you will probably ask yourself, "Why haven't I thought to cook this sooner?"
If you're short on time or money, this is the meal for you!
This is the kind of meal you sneak bites of throughout the day.
It's a BIG flavor dish and 100% guaranteed to please!
Unless you don't like good food.
There is something magic about the combination of the salsa, turkey, rice, and cilantro.
I know, it sounds kind of simple, but, I'm telling you, the end taste is something special!
Not only is it tasty, it's healthy too!
This recipe is dairy free AND sugar free!
